I tried taking pictures of my burritos, but you know what I’m talking about, and I’m sure there’s some professional a-list burritos out there with the same ingredients and better pics. You get the idea.
While I do love being vague with ingredients and amounts, the only thing you really need to concern yourself with is the tortilla – get the big ass burrito ones and don’t fight me on this. Outside of that, cheese, protein, to potato or not to potato, all on you.
INGREDIENTS:
- burrito tortilla
- eggs
- shredded cheese
- potatoes (diced, hash, or skip)
- sausage
DIRECTIONS:
STEP 1: cook sausage (or meat of choice) in pan and set to the side once cooked through.
STEP 2: lower heat on pan to a medium low to prep for the eggs
STEP 3: whisk eggs into a a bowl with a splash of water (Big Milk has been in your ear far too long. water is FINE); I find that an egg per burrito being made works well here.
STEP 4: add butter to your pan before tossing in the eggs
STEP 5: scramble those eggs
STEP 6: with eggs and sausage set aside, time to cook the potatoes! you don’t have to cook them in this order, as long as they are all cooked by the time they make it to the burrito we’re good
STEP 7: if using potatoes, cook with a generous amount of oil on a medium heat. I use some bagged hashbrowns potatoes, do with this information what you may
STEP 8: once all components are cooked, prep burritos for filling
STEP 9: add eggs, sausage, potatoes, and shredded cheese to your burrito. you’ll probably want to use a little less filling than expected
STEP 10: fold burrito. pull two sides toward the middle, then roll it from the opposing direction to keep everything in
STEP 11: given them a decent sear on the opening flap to secure in place
STEP 12: wrap and freeze individually, or eat them all at once.
