Sticky Cherry Chicken

What started out as curiosity sparking from Hailee Catalano on TikTok has become a monthly staple in my house. Crazy flavorful, colorful, and simple to put together. Definitely give this one a try.

Ingredients:

  • chicken thighs (or whatever variation you prefer)
  • frozen pitted cherries
  • rice vinegar
  • cilantro
  • jalapeños
  • green onion
  • garlic
  • ginger
  • honey
  • soy sauce
  • shallots

Herb Slaw

Best to prep ahead of time so you can give that chicken some love when it’s time comes.

Finely slice up jalapeños, green onion, and cilantro (I like a rough chop for cilantro, personally). Set all ingredients aside in a bowl together until final assembly with chicken.

Chicken ‘n Cherry Prep

STEP 1: season chicken with salt and pepper before searing on a medium-high pan.

STEP 2: once chicken is seared on each side, set on a rack and transfer to oven to finish cooking. *temp check to avoid dryness!

STEP 3: reduce pan heat slightly and add in diced shallots, minced garlic, and ginger shortly after.

STEP 4: add cherries to pan and squish once warmed to mix into shallot/garlic/ginger mix.

STEP 5: stir in soy sauce, rice vinegar, and honey – adding to taste preference.

STEP 6: once chicken is fully cooked, toss them in pan with cherry sauce to fully coat before plating.

STEP 7: plate chicken with a generous amount of cherries and all those yummy juices. dress plate with your herb slaw.

STEP 8: enjoy your new fave weeknight dish, and maybe add some more cherries or slaw along the way.
