
Weeknight dinner just had a major W. Honestly, orzo can amplify any dinner as your sexy starch of choice. Use the main recipe and cater to your dinner palate needs. Or don’t!
The Salmon
STEP 1: prep your salmon with a generous amount of olive oil
STEP 2: dry herbs are preferred here. take a small bowl to mix your herbs and seasonings. you aren’t new here, measure with your heart; you’ll know what feels right to you.
STEP 3: generously dust seasoning mixture over salmon, coating entirely on all sides.
STEP 4: put salmon in baking dish with thick slices of lemon surrounding. cover with foil.
STEP 5: in oven @ 400 degrees, cook for 15 minutes or until salmon is flakey.
The Orzo
STEP 1: in large saucepan, heat on medium + add orzo.
STEP 2: toast orzo for 3-5 minutes or until nutty aroma.
STEP 3: add broth to pan, 2-3 cups or enough to cover orzo two to three times over.
STEP 4: stir occasionally to avoid sticky bottom and until broth is fully absorbed.
STEP 5: add 1/4 cup of heavy cream and stir until mixed.
STEP 6: taste to ensure orzo is fully cooked.
STEP 7: squeeze juice of one lemon into orzo, season as desired.
The Plating
Add your filet of salmon over a scoop or two of orzo, and give an extra squeeze of lemon over it all for good measure. Plate with your favorite veggie (we eat our greens over here), and enjoy!
