Eggs Benedict

Eggs benny! Just looking at this makes me want a mimosa. Take a deep breath, this will be a relatively easy run with major payoff.

INGREDIENTS:

  • biscuits (i used canned)
  • eggs (at least three)
  • canadian bacon
  • butter
  • white vinegar
  • lemon

INSTRUCTIONS:

STEP 1: preheat oven to whatever biscuit can requires

STEP 2. MAKE HOLLANDAISE SAUCE

Put saucepan on stovetop with an inch of simmering water

Place heatproof bowl on top of pan, w/out touching water

Add in two egg YOLKS + tbsp lemon juice + whisk for 1min

Slowly drizzle in melted butter (4 tbsp)

Once thickened, take off heat and season to preference

STEP 3. put biscuits in oven *take out 2-3 min earlier than can rec

STEP 4. POACHING OF THE EGG

Bring pot of water to a simmering point

Add in splash of vinegar

Crack egg into small bowl

Stir pot (lol) into gentle whirlpool

Slowly lower egg into water dropping CLOSELY

Let it poach for 3-4 minutes to set

Gently remove with slotted spoon or ladle

STEP 5. split biscuits (reheat if needed) and butter

STEP 6. add canadian bacon (flash reheat if needed)

STEP 7. add poached egg + hollandaise drizzle

STEP 8. dress plate with paprika, green onion, however you desire

STEP 9. instagram this moment and enjoy while it’s hot!
