
Make canned cranberries sexy again! Were they ever? Anyways…
This was my take on cranberries at the thanksgiving table while also checking off the “something green” and I think it was a success. Make it sometime! Or don’t.
INGREDIENTS:
- chopped kale
- walnuts
- canned cranberry
- goat cheese
- olive oil
- lemon juice
- garlic
- apple cider vinegar
- dijon mustard
DRESSING PREP:
In small bowl, grate clove of garlic and the juice of an entire lemon. Add in dijon mustard and splash of ACV to your preference.
INSTRUCTIONS:
STEP 1. Pour kale into large bowl and drizzle olive oil over top
STEP 2. With clean hands, massage oil into kale.. really get in there
STEP 3. (optional) mix in dressing or serve on side once complete
STEP 4. (optional) toast walnuts in pan until nutty aroma lingers, otherwise crush them up and pour over salad raw
STEP 5. open cranberry can and scoop small chunks onto salad (I usually use my hands for this to get smaller chunks)
STEP 6. crumble goat cheese on top of salad
STEP 7. serve and enjoy
