No, it’s not your nonna’s, it’s some random gal from the midwest unfortunately. Not authentic, but it IS delicious.

INGREDIENTS:

  • arborio rice
  • breadcrumbs
  • stock/broth
  • butter
  • egg
  • parmesan
  • mozzarella
  • neutral oil

RICE PREP STEPS:

  1. in pot, bring broth to a boil
  2. add rice, stir until fully cooked and sticky
  3. stir in butter (I use 2 tbsp) and parmesan + season
  4. lay rice out in tray(s). think flattened sheets of rice
  5. gently cover and allow to cool completely

ARANCINI PREP:

  • Take 2-3 TBSPs of rice mixture and flatten in hand
  • Place chunk of mozzarella in center and fold rice around
  • Roll into tight ball and continue process until out of rice
  • Prep two bowls: one with beaten egg, one with breadcrumbs
  • Prep pot with neutral oil around 350 degrees
  • Roll each ball through egg, then roll through breadcrumbs
  • Carefully drop arancini balls into oil one by one, take out when golden brown
  • Plate with a puree or sauce of your choice!
