
No, it’s not your nonna’s, it’s some random gal from the midwest unfortunately. Not authentic, but it IS delicious.
INGREDIENTS:
- arborio rice
- breadcrumbs
- stock/broth
- butter
- egg
- parmesan
- mozzarella
- neutral oil
RICE PREP STEPS:
- in pot, bring broth to a boil
- add rice, stir until fully cooked and sticky
- stir in butter (I use 2 tbsp) and parmesan + season
- lay rice out in tray(s). think flattened sheets of rice
- gently cover and allow to cool completely
ARANCINI PREP:
- Take 2-3 TBSPs of rice mixture and flatten in hand
- Place chunk of mozzarella in center and fold rice around
- Roll into tight ball and continue process until out of rice
- Prep two bowls: one with beaten egg, one with breadcrumbs
- Prep pot with neutral oil around 350 degrees
- Roll each ball through egg, then roll through breadcrumbs
- Carefully drop arancini balls into oil one by one, take out when golden brown
- Plate with a puree or sauce of your choice!
